Easy Chorizo & Shrimp Soup

I just came up with an easy soup recipe; it turned out great. Chorizo & Shrimp Soup. Only 6.4g Carbs (.5 fiber), 24.1g fat, 18.5g protein, & 312 calories per 10 oz. Serving. My recipes makes 10 servings, but it can be easily cut in half.

2-32 oz. Boxes of chicken stock
1 lb. Raw Shrimp, peeled, deveined, lg.chopped
14 oz pkg of mild chorizo sausage, sliced.
2 cans rotel type tomatoes
2 cans coconut milk
2 tsp Orrington Farms Ham Seasoning Base
1/2 Tbsp. Old Bay Seasoning
1 tsp Spanish Paprika
1 tsp dried parsley

Add xanthan gum to thicken if desired. No net carbs.

Cook sliced chorizo in bottom of soup pot, add canned tomatoes, stir to deglase pan of brown bits. Add chicken stock, ham base, and spices. Simmer 10-15 minutes. Add shrimp, cook addition 2 minutes. Add coconut milk, heat through and serve. Hope y'all like it!
