Happy Tuesday Challengers!
I have a looooong work day ahead of me but luckily already have a healthy lunch and snacks packed so I won't succumb to the cafe food or the vending machines. Yay for planning!
I hope you are all continuing to do the positivity challenge. I really believe its a good exercise to do.
Now on to the yummies! Today is recipe share.
The one thing I have trouble fighting is french fries. I love them. My mom told me of my first few words "fry fry" was one of them. If that doesn't determine a future fat girl I don't know what does :ohwell: :laugh:
Anyways I have found a healthy replacement!
Pre-heat oven to 375 degrees
Take 2-3 large carrots and slice them into several flat pieces.
I make them just a little thicker (I used my hand held slicer)
Place foil over a cookie sheet. spray with a little olive oil, lay carrots down spray the top of them with a little more olive oil and season to your liking ( I use garlic powder, italian seasoning and pepper)
I like mine a little crispy on the outside but still soft on the inside so I cook them somewhere between 20 and 30 minutes.
Dip them in ketchup or ranch and its like you're in french fry heaven without the guilt!

P.S. I know today is also a day to remember those who lost their lives in 9/11. I know some of you are not in the US and may not acknowledge this day but it is a marking day in history. My heart goes out to any families that are affected on this day.

Hope everyone is having a good day, despite that it's the 11th anniversary of the tragic events of 9/11... May God bless the victims, their families, and all the troops fighting for us and our country!
I'm at work this evening, and forgot all my recipes at home, so forgive me, I don't have a recipe to share that I've actually tried... However, I looked online and found a recipe that I plan on trying, does that count? haha So that's the one I'll share with you all today, and hope it's as good as it sounds!
Low Fat Blueberry Bran Muffins
Ingredients
1 1/2 cups wheat bran
1 cup nonfat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries
Directions
Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or use paper muffin liners. Mix together wheat bran and milk, and let stand for 10 minutes.
In a large bowl, mix together applesauce, egg, brown sugar, and vanilla. Beat in bran mixture. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt. Stir into bran mixture until just blended. Fold in blueberries. Scoop into muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

I am a mashed potato lover! Here is a recipe for a healthier alternative to mashed potatoes that's just as yummy!!
Creamy Mashed Cauliflower
8 cups bite-size cauliflower florets (about 1 head)
4 cloves garlic, crushed and peeled
1/3 cup nonfat buttermilk
4 teaspoons extra-virgin olive oil, divided
1 teaspoon butter
1/2 teaspoon salt
Freshly ground pepper to taste
chopped fresh chives for garnish
Place cauliflower florets and garlic in a steamer basket over boiling water, cover and steam until very tender, around 12 to 15 minutes. (You can also place florets and garlic in a microwave-safe bowl with 1/4 cup water, cover and microwave on High for 3 to 5 minutes if you don't have a steamer basket.)
Place the cooked cauliflower and garlic in a food processor. Add buttermilk, 2 teaspoons oil, butter, salt and pepper; pulse several times, then process until smooth and creamy. Transfer to a serving bowl. Drizzle with the remaining 2 teaspoons oil and garnish with chives, if desired. Serve hot.

I dig the carrot fries idea! You can also use butternut squash to make a faux fry and it is Awesome! Carrots probably have fewer calories though!
When I was trying to go carb free (breads, pastas, chips, etc) at dinner time, my husband's joke was that my standard meal was meat, cheese, and veggies. So, here is my fave meat, cheese, and veggies combo:
1/4 lb 96% lean ground beef cooked in skillet, season to taste (I use cumin, oregano, garlic, and whatever else catches my eye)
Cut up red and green bell pepper and saute in skillet
Add serving of shredded cheese of your choice- I usually do part skim mozzarella.
Put it all together!
It is a lot like stuffed bell peppers, just minus the rice! I love it and so does my husband- he actually asks for it sometimes!0
