I want to make my first enchiladas since becoming vegan. I would love suggestions on recipes to try or just general advice for making vegan enchiladas! Thanks!

I'd stay away from the straight cheese kind unless you love vegan "cheese". Try spinach ones ( they are usually in a creamy sauce, maybe a cashew cream?) or bean varieties. Here is a recipe for burrito filling that I made which was fantastic, maybe you can adapt for enchiladas...

I made my own recently. I used roasted corn and squash with pico as the filling. I just wanted something different from beans.0

I haven't tried an oh she glows recipe that I didn't love! I'll be making the butternut squash mac and cheese for my family next week. Maybe the whole week will be her recipes!0

I needed to come back and tell you guys I found a recipe searching google and just went with it. These enchiladas were better than any I had as a vegetarian. All of your suggested recipes look great and I'll still be trying some of those but here is the one I used:

I used about 2/3 of a container of better than sour cream (and that was plenty) I also cut down on the cheese. I filled seven tortillas with the filling, a half cup of daiya cheddar shreds, and about 4 oz of diced green chilies. Then I topped them with another 1/4 cup of daiya, jalapenos, and black olives.
Talk about comfort food. These were not healthy or low cal by any means but they were an amazing treat!!!!0
