Does anyone have any ideas for dinners or websites for myself (almost 14 wks) and a 3 year old since my husband will be out of town all week? I don't really want to resort to eating out or eating high sodium frozen foods, but I am afraid I will be too exhausted at the end of the day to even think about what to make.

I love my crockpot if you have one. I can usually make something that will last us a few meals so I am not making a different meal every night. My son is 9 so its been awhile since I have had a three year old not sure if you have a picky eater. Mine loves chicken and dumplings and it is easy to make. Google crockpot recipes and multiples pop up I usually substitute certain ingredients if I do not feel they are healthy enough like for instance if it calls for canned soup I go for low sodium and fat, or if it wants you to use heavy cream I use skim milk instead.

Grilled cheese. Soup. Quesadillas. Breakfast for dinner. Homemade "lunchables".

I made this tonight...sounds gross, but it was awesome...

Mix together 1/2 cup mayo and 1/4 cup shredded Parmesan cheese. Spread over 4 chicken breasts and sprinkle with bread crumbs. Bake 20 minutes at 425.
