holiday main course ?

With the holidays coming up and this being my first round as vegan (vegetarian for the last 3 yrs) what do you make for a main course on holidays? (please..no tofurky..yuk)
I am especially interested in low or no added fat ideas, no nuts that sort of thing. I want something yummy and a bit special...I will also need to feed 2 adults and 3 kids, and the omnis who insist on trying my food to prove its gross...I want them to be jealous!

    Have you tried making your own seitan? Post Punk Kitchen has a good recipe. I've also done stuffed acorn squash as a main dish. Yum!
