This is a yummy and nutritious way to use up leftover vegetables (or cook up new). I made it with broccoli, edamame & arugula, but you could use whatever you like.
Here's the recipe --

Sounds good. I keep looking at the Shiratake noodles and am wondering if they are mushy in texture. I know they can't be but so aldente but I do want to try them in some recipes...:huh:0

No, they're not mushy. They have a little bite the way calamari does. But I find that once they're tossed with all kinds of goodies, you can't even tell they're not regular noodles.0

Oh ok, I can work with that.0

Are they noodles made from mushrooms? I might actually like that.0

Actually, they're made from a sort of Japanese root vegetable resembling yams, but you would NEVER guess that. Here's a thread on it: http://www.myfitnesspal.com/topics/show/778420-best-new-thing-in-the-world-shirataki-noodles0
