Thanks Goingalltheway for starting this thread!! I love recipe threads and trying new recipes (though I'm a hopeless cook at times)

If you're a snacker who likes crunch, try kale chips!

    Ingredients
1 head kale, washed and thoroughly dried
    2 tablespoons olive oil
    Sea salt for sprinkling
    Directions
Preheat the oven to 275 degrees F.
Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food.

I made these today and they satisfy the need for crunch just like a potato chip and they're quite tasty! You can season them with things other than salt, too, and flavor them any way you'd like! I want to try that dry ranch dressing mix next...it just might be like a cool ranch Dorito! ;)

i tend to eat a lot of protein and try and limit my carb intake to fruits and non-starchy veggies.
someone on MFP posted this link:
    http://yourlighterside.com/your-lighter-side-cookbook/

ive only tried one recipe so far. and it was delish... but there seem to be a lot of good ideas there.

    the recipe:
    1/4 C. whole milk
    1/4 C. water
    1 C. pumpkin
    1 pkg sugar-free pudding.
    1/2 tsp pumpkin spice
(garnished with light cool whip, graham cracker crumbs and pumpkin pie spice)

each 8oz parfait only 105 cals

(125 cals with light cool whip as shown in pic)

( i tried 3 quick "pumpkin pie" recipes posted on MFP. this is my own variation on one... its leaps and bounds above the rest)
    ITS SOOOOOO DELICIOUS!
    Tastes sinfully decadent.

This is one of my favorite websites for receipes, www.skinnytaste.com
Most receipes come with nutritional info!!! I have made the coconut thai curry talapia, and it was AMAZING!
