Black Bean Brownies

One 15-ounce can black beans, drained and rinsed well
3 eggs
3 tablespoons coconut oil
1/2 cup maple syrup
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/2 teaspoon baking powder
Pinch salt
1/3 cup semi-sweet chocolate chips (enjoy life)
Preheat the oven to 350. Lightly oil an 8 x 8-inch baking pan.
Place the black beans in the bowl of a food processor and process until smooth and creamy. Add the eggs, oil, maple syrup, cocoa powder, vanilla extract, baking powder, and salt and process until smooth.
Pour the batter into the prepared pan. Sprinkle chocolate chips on top.
Bake approx. 20 minutes, or until a fork inserted in the center comes out clean.
