"Yogurt" recipe!!

I was feeling spunky and creative yesterday so decided to try to create a vegan "yogurt". And I actually had success!! It is pretty sweet with a little bit of tang and very thick, like Greek yogurt. It doesn't have that funky soy taste that lots of vegan yogurts have either. You could play around with the ingredients to get a different texture and different ratio of macros if you want.
This morning I had it with a banana and sunflower seeds. It would be really good with walnuts or some other type of nut and a little drizzle of maple syrup on top.
So here is the recipe and nutrition info.
I actually juiced a whole lemon, so it might have more like 1/4 cup of lemon juice.
Just place all ingredients in a blender and blend until smooth.
I added some vanilla too; I would say start with a tablespoon and see where it needs to go from there.
Then chill and voila!
This filled a quart mason jar to the very top.
p.s. It also tastes kind of like whipped cream and could totally be used for dessert!!

That sounds like something my daughter would love. However, I have no idea what coconut cream is? Is that different than coconut oil?0

Yes, it is different than coconut oil. You could also use canned coconut milk, and even the light varieties which have less fat. The Trader Joe's coconut cream is really thick and I think higher in fat than milk. If you use the coconut milk you may have to add more chia seeds to thicken it up a bit more. Canned coconut milk is usually found in the Asian/ethnic food sections and is used in curry dishes.0
