Chili and other slow cooker recipes

I'm very particular about my chili. I prefer it without meat substitutes, and I dislike it when vegetarian chilis have a ton of vegetables in them-- especially watery, summery ones like zucchini. So I tried this recipe over the weekend (using a mix of kidney and black beans) and it was perfect. Even better the next day after the flavors had further developed:

I'd love to use my slow cooker for more things, but there don't seem to be many vegetarian recipes that benefit from it. Usually I get better results cooking things quickly on the stovetop. If you have a great slow cooker recipe, please share!

    My chili doesn't have any meat subs or veggies in it (other than onions and tomato sauce). Just beans and spices. My boys hate the stuff with big chunks of zucchini in it. Even chunks of tomato are not acceptable. Only sauce.

    Bump.

    I just got a Crock Pot for Christmas and looking for good veggie recipes to try. The recipe below for Caribbean bean stew is one of my favourite winter dishes, I haven't tried it in a slow cooker yet but I will test it and get back to you.

    I added some seitan for extra protein and served it with spicy rice although it would have been enough of a meal in itself without the rice. It made 5 good servings so I've got healthy food to warm up for my dinners for the next few days!

    I also Hester's book The Vegan Slow Cooker, and it's definitely one of my most used cookbooks. Some of the recipes are a little low in salt for my taste (and I don't consider myself a salt-addict), but they're all very creative. I love the chana saag, cheesy broccoli rice, smoky mac and cheese, and peanut coconut fondue. Yum!

    I saw a recipie on another message board for curry in a rice cooker. Since I don't own a rice cooker I thought I'd try it in my slow cooker.

    Curry
    1 cup brown rice
    3 cups water
    1 cup frozen peas and carrots
    1 can chickpeas (I used 2 Gardein chic cutlets)
    2 TBS of curry or to taste
    1/8 cup of raisins (I used 1/4 cups and I can't ever spell raisins)
    Combine everything in slow cooker on low and it's done in 3 hours.

    I then tried it with black beans and rice
    1 cup brown rice
    3 cups water
    1 can drained and rinsed black beans
    1 cup salsa (your choice)
    1 can hatch chopped green chilis
    Mexican seasoning to taste.
    Combine everything in slow cooker on low and it's done in 3 hours.
    I topped this with the crumbly mexican cheese, cilantro and fresh diced tomatoes.

    Perfect for weekend lunch or dinner. I think the possibilities are endless on this and am thinking that if I buy a timer, I can throw everything into the slowcooker and have the timer turn it on 3 hours before I come home from work. Since there isn't any dairy or animal ingrediants, there is little chance of spoilage.
