What to do with tofu?

I bought a block of smoked tofu and now I'm looking for a recipe or two to try out.

Grilled in a panini? OR mixed into a paneer with rice?

Ideas please - especially something to convince my wife to try more vegan stuff.

    For smoked tofu use it for something that compliments the smoked flavor. Maybe in chili.

    For regular tofu, try it with an Italian tomato sauce and pasta.
    Or substitute it for egg in fried rice.

    Cook it like meat, brown it and season it with aromatics like onion and garlic first.

    Marinate it and bread it panko crumbs, bake in oven. That's always yummy. Or, like above, replace eggs with it...I love tofu scrambles with a bunch of veggies!

    There are a lot of possibilities with tofu...it's a fun food because it's so versatile.

    slice thinly and eat like cheese....so a panini

    I saw a picture of this sliced with tomato and basil. Some red onion and garlic would go a treat too

    Go to www.happyherbivore.com. Click on recipes then by name and type in tofu under ingredient. All great, low fat, and vegan. I have all cookbooks, and everything I've tried has been great.
