(Vegan) caprese salad with a twist

We all love mozzarella cheese, but we can't all "afford" it, if you get my drift.
I will never steer you wrong when it comes to food. This is a GREAT (and vegan, if that matters to you) caprese salad. Don't knock it 'til you've tried it.
1 beautiful heirloom tomato, sliced thick
2 1/2-inch slices of extra firm tofu -- about 1/4 package
several fresh basil leaves
a drizzle of balsamic vinegar
Stack in order: Tomato, tofu, balsamic, basil
If you don't love this, there's no hope for you. ;c)

I have to say I'm a little nervous to buy tofu. lol.
However... Alice.... you are right, you never steer us wrong, plus, you have good taste.
In fact, I finally bought the shiritaki noodles, now they wait in the fridge for me to be brave enough to make your recipe.
Will buy the tofu, this one looks easy.0 -
Once you buy the tofu, slice it about 1/2" thick, put one slice in a frying pan with a little sesame oil and lightly brown on each side. Then do a taste test of the cooked one next to the cold one. I think you'll get the idea of how versatile it is from that.
BTW - I divide the block into 6 pieces, with each 2 slices = 1 serving = 116 calories & 17g protein!0 -
Bought it... didn't try yet though.
Surprise, tofu is cheap! I got like three little boxes of it at costco for 4.99!
Also excited about the high protein content.
That alone is exciting.... I just need to get the basil and I'll get back to you on this0
