Ah the incredible eatable egg! (EASTER is approaching and good time to decorating egg time is here! Oh the memories!)

    I'm eggstatic about the post! All eggcept the lack of yolk -- long live the gooey middle!

    Sidenote: Quick breakfast - hardboiled egg and avocado slices on whole wheat toast.

    I eat whole eggs everyday right now. And since the egg is a whole food, I believe it should be eaten whole - yolks included - don't leave them out as that completely changes the food nutrtion value of them. Quick Breakfast: 2 slices of bacon chopped up, veggie of choice (I'm using asparagus or mini bell peppers at the moment), 1 oz of cheese, 2 eggs. I sometimes add seasonings too. Put it all in a coffee cup and stir. Microwave for about 2:30 minutes. Eat.

    If you want some other egg mugs here is a link from Hungry Girl - most of these are made low fat and with egg whites if that is your preference. She loves eggs in a mug.

    I was at walmart a few weeks ago and found some interesting little gadgets there. One makes hard poached eggs (just crack an egg in the holder add a tablespoon of water and pop it in the microwave for 30 seconds) and the other makes the middle of a breakfast sandwich (just crack an egg in it, add your meat and pop it in the microwave for 1 minute, flip that on some toast, bagel, sandwich thin, ect add a piece of lowfat cheese and you're out the door!) Less that $10 for both (you can buy them separately)
    I've been putting the florentine egg beaters in the sandwich one and eating just that (no sandwich stuff) with some yogurt and fruit for breakfast.

    Too bad I don't like eggs. I wish I did cause I know they are good for you but I just can't eat them by itself.
    Sometimes I crack them into cooked oatmeal, that's not too bad. This way they are hidden and I can't see, smell & taste them.

    Perfect, I boiled some eggs the other day and already logged one to eat with lunch.

    I like eggs for the most part, but the easiest way to eat them is boiled for me. It just means I don't have to worry about how I'm going to fix them or what to eat it with.

    I have made my own version of the egg muffins and they are good. My family liked them too. Eggs, the whole, nothing but the egg are good for you. I do not eat them too often because sometimes I do not digest them.
