Are there any vegan bakers out there? I would love to veganize my mother's recipe for Irish Soda Bread and I have it mostly figured out. The one thing I'm stuck on is that the last step before putting it in the oven is to brush the loaf with a beaten egg yolk, which gives it a nice crispy, glossy crust. I supposed I could just leave this step out, but is there a vegan alternative to the egg yolk that I can use instead?

I've read that soy milk is a good alternative, but my baking is limited to the occasional pan of vegan cornbread so I can't vouch for it myself.0

I would try brushing it with oil.0

I personally put a little earth balance vegan buttery spread stuff on the top of mine0

1 Tbl brown rice syrup or barly malt mixed with 1 Tbl water0
