My work is having a food day, where we all bring in food to share.
Of course I am the only person who is gluten free, and most of my coworkers think I am pretty strange for turning down all the treats they bring in.
What do you guys bring to potlucks, food days, etc.
I think I may make some black bean brownies - but I'm looking for other suggestions.

I always make chex mix. I usually make the butter toffee one. Everyone loves it and it give a snack to eat to. People request that I make it.0

you could do something like rice and beans or if you are looking for treats some kind of fruity tart with an almond crust! YUM
Almond crusts are one of the supreme joys of gluten free baking.
I've made GF mac and cheese for sharing at family gatherings, and GF cookies for potlucks. GF shortbread works especially well - actually tastier without wheat - the Bob's Red Mill mix is good with the butter increased to two sticks.0 -
I usually make a casserole with chicken, brocolli, and rice plus a small dessert type item. That way I ensure I have a full, safe meal.0

Speaking of having a safe meal, serve yourself early, before cross contamination occurs.0

I usually make this really easy and yummy pasta salad, using a GF pasta. It's just a box of GF pasta (penne, mac or spirals), a can each of corn, black beans, diced tomatoes, tossed with some mayo, chili powder and whatever other taco-seasoning-esque spices you like (of course making sure everything is GF). It's good b/c it is hearty and filling, and also covers any vegetarians who might be present!0

Quinoa Curried Salad (I've had great success with this concoction - it's one of the dishes that everyone asks me to bring to parties now)
Cook your quinoa ahead and let it cool a bit if possible.
Saute: chopped onions, red/green/yellow bell peppers (or any kind you have), minced garlic and ginger
In some olive oil (and you can use some butter or smart balance with that if you want) add curry spices, cumin, garam marsala and let them cook a bit in the oil to release the flavors. (I'm generous with my spices)
Add in the cooked quinoa and sauteed veggies
Add in some frozen peas
I add some salt and pepper and pepper flakes to taste.
.Add in some chopped up dried cranberries (Ocean Spray - want them sweetened)
Add in some toasted pine nuts (slivered almonds or cashews will work as well)
I don't measure ingredients :-) I just go by look and feel - depending on how much quinoa you want to make - I usually make at least 2 or 4 cups depending on size of group to feed - great even at room temp! (GF and nice for those who are vegetarian)0 -
