Menu & Shopping List for Week 1

Here's my menu for next week:

1) Cabbage Goulash
2) Waldorf Tuna Salad (double batch)
3) Skillet Taco Pie w/homemade guacamole
4) Whole Roasted Chicken
5) Hard Boiled Eggs/Egg Salad
6) Smoked Sausage with Kraut
7) Stir-fry/fajitas

I will make items 1-5 on Sunday. On Saturday, I will make a batch of mayo and batch of ranch dressing. Items 6 & 7 will be for nights that I have time to cook a meal from scratch. See recipes below:

    Awesome meal plan.

    I haven't totally decided on my week yet, but so far:

    Breakfast: Crustless Quiche from Practical Paleo with a side of sauteed kale
    Lunch: Puerto Rican Beef from realfoodfreaks.com
    Dinner: Random assortment of pork chops, hamburgers, steaks, anything else in my freezer I can quickly throw on a grill. With a big ole salad and sweet potato fries.

    I went grocery shopping tonight & stocked up on all my necessities for this coming week. I'll be cooking up a storm on Saturday!!

    Breakfast:

    SERIOUSLY this past weekend it seems like ALL I DID was cook. I did not effectively schedule out my order of what needed to be cooked when. Hopefully I won't make these mistakes again. I will say this... the chicken broth that rolled in my crock pot for 24 hours (!!!) turned out AMAZINGLY well. I used it in the chipotle chicken soup (having it for lunch today) and ended up with three two-cup servings that I bagged and put in the freezer for use later. I put a whole organic chicken in the crock pot and when it was done, the meat literally fell off the bones - some of the bones practically melted. We ate some but I reserved & froze a full two cups of meat. My house smelled fantastic thats for sure.

    So after my adventures in the kitchen this weekend I ended up with 11 servings of chipotle chicken soup, 10 servings of Texas chili, 8 servings of roast & veggies, the broth and reserved chicken. I have veggies chopped & prepped in the fridge and plenty of eggs for breakfast.

    I still have chicken that I defrosted to put on the grill - I'll get that done tonight (crazy rain storms most of yesterday throughout Florida prevented me from grilling those up too).

    That's awesome that you were able to plan it so much in advance! I'm sure that will help tremendously!

    I'll have to go pick up some veggies tonight.

    For today, I made hard-boiled eggs for breakfast (enough for tomorrow too) and ate it with a tangerine. Then I made homemade pork burger patties, along with some kale and mushrooms sautéed in coconut oil.

    Not sure what's on the menu for tonight yet, but I'm going to try to make some clean ketchup and avocado mayo.

    bought a food processor to play with - so yesterday was serious shopping day. made an egg, dill, broccoli onion casserole and cut it up for breakfasts, crockpot a chuck roast with vegetables that i shredded and will be picking at throughout the week, then a ground beef and butternut squash casserole with eggs, onions and broccoli in it as well. all with coconut oil or ghee...mostly the coconut oil. hard boiled some eggs too.

    made the mayo, but i messed up the ratios becasue i was originally going to make a double batch but realized i didn't have enough of the olive oil, so i was scooping things back out LOL. the consistency is okay, but the taste is eh...i need to add more salt i think and it should be fine.

    i have to say i was analyzing the hell out of the tuna cans - do you guys just buy the regular chicken of the sea, etc? Or organic? I ended up buying organic and overspending becasue i analyzed too much.

    the butcher at whole foods was super helpful too - i was thankful. i never really went to the meat counter let alone buying a ton of beef.

    coming up on noon and i haven't been too hungry i think after the egg casserole thing and 1/2 sweet potato for breakfast plus a handful of cashews. i ate a HB egg a little bit ago and now im getting hungry again. i know i was stressing about the food amounts allowed and eating how often....but so far so good - but then again it's only noon on day 1

    how often do you guys snack? i know it says "try" not to, but do you eat nuts or veggies or whatever?

    All those casseroles sound so yummy!

    I was trying to triple my batch of mayo this weekend and put twice as much sea salt in as I was supposed to... talk about scooping stuff out! LOL! It turned out fine (a little too salty, but not bad).

    I pay ridiculous prices for organic, wild-caught tuna with no funky additives.

    I like to eat every 3-4 hours, so I have a "pre-workout" snack in the afternoon (whether I am working out or not!) I just make sure it is a well-rounded snack. For example, today I'll have Waldorf Tuna Salad, which is a nice mix of protein, fat and carbs. I also packed a measured one-serving of almonds just in case...

    that's what i figured - i picked up "regular" cans of tuna and was like ehhhhhh and put it back and picked it up again. i don't think i ever spent so long in a tuna aisle lol. ah well - it won't kill me to invest a little more in good stuffs (literally i suppose!)

    Well, today started my 1st day and so far so good except for the coffee withdrawals I have had all morning...UGH...I mean, I just can't drink it black right now. I tried and made a bad face every sip. I tried adding the coconut milk from can with some cinnamon and although not too bad straight from the spoon, it didn't really help the black coffee. I wanted to share with you all something I found on pinterest that I tried and it's awesome especially for on the go...

    I'm just gonna call it baked eggs..LOL..So I took my muffin pan and put olive oil in each cup. then I cracked an egg in each cup. Then you add whatever you want. I put spinach in 6 of them. salt, pepper, etc. Bake at 350 for 15-20 minutes and viola! 12 fully cooked eggs. It was so so easy and quick and gonna be great for on-the-go...

    Have you tried it with almond milk? I use to be a faithful half & half with splenda coffee drinker and now I just do almond milk. It takes a couple times to get use to it but now I love it and prefer it over half & half.

    Also, CKSummer, you'll see that after a few times, you'll get used to it black or at least without cream (you're right that coconut milk isn't the same). It's admittedly still not as good, but it'll become tolerable and even enjoyable.

    Have you given soda water a real try? So much better than flat water. I usually put some lime and/or lemon in there to add some flavour.

    Coffee was a tiny tiny bit better this morning and I'm thinking I might wanna go for some different coffee. I'm a folger's drinker but maybe I can find some that has a better taste when it is black. LOL. I know it's all excuses. But other than that specific issue, I'm all in. I have not tried soda water. Maybe I should.

    Also, I find that better quality coffee tastes better black (think organic, free trade stuff!)
