Breakfast

So I think the one meal that I fear the most is breakfast. I need something quick and easy. What do you gals do for breakfast?

    I eat two (reheated in the microwave) with a half of a baked sweet potato (I keep several baked in the fridge at all times). Works like a charm!

    Have you found that your egg muffins come out tasting kind of fishy? I have had that happen more than once, and can't figure out the cause. It's not so fishy that we can't eat them, but there's a definite sort of fish taste. Weird, huh?

    My go-to breakfast has been eggs cooked with some kind of leftover meat thrown in, and/or veggies like fresh spinach or frozen peppers/onions mix. I'm getting pretty tired of eggs, truth be told, but our leftovers are saved for lunches, so there's been little other choice. I need to start getting more creative!

    Fishy? Not that I recall. Do you add any dry seasoning to them? I have a shaker with some homemade taco seasoning that I throw in there & I also shake some red pepper flakes on top like "sprinkles. I've got enough heat going on that it would burn off any fishy taste LOL!!

    I typically fry some eggs, sometimes with meat and usually half an avocado.

    I've tried a number of variations on the egg muffin, so have used a variety of seasonings in the past. I've always (pre-W30) sprayed the muffin tin with non-stick spray, though, and wonder if that's the cause. I'll try again with paper liners and see if that makes a difference! :)

    I have one of those air pumps that I put olive oil in. The eggs still stuck just a little. I think next time I will use paper liners but still spray them a little.

    I've definitely experienced the fishy taste. I find canola oil gives it that taste. Sticking with olive oil (or coconut oil - which is a little tougher since it doesn't spray) would likely be your best best.

    I found spray coconut oil at a local harvest store, it was expensive but now I won't use Pam and whatever chemicals come with it. I've used olive oil spray in the past as well.

    The coconut oil spray brand is Spectrum.

    This is what I usually do too. Today I had some left over veggies I needed to use up (mushrooms, onion and zucchini) so I diced them up really small and cut up some chicken sausage and made a hash with 2 fried eggs. Delicious! I'm doing it the rest of the week now!

    I made the breakfast muffins today using paper liners, and the fishy taste wasn't nearly as noticeable, so yay! I think because I half-expect them to taste fishy by this point, I did sense a twinge of fish, but that very well could have been my imagination. One thing I found funny - the muffins bubbled up in such a way that there was a big air bubble under each muffin, so it's like the bottom half of the muffin is entirely missing! How funny. :)

    I made a giant breakfast casserole with broccoli, onions, eggs and dill and then portioned them out. Is pretty good :)

    Brown some onions and soften the broccoli in coconut oil, then dump them in the casserole dish, whisk a dozen eggs and pour it over - add some dill and whatever other seasonings. Bake for 40 mins or so at 350.

    Original recipe had asparagus instead of broccoli, but i bought a ton of broccoli for the week so i just used that.
