I had some beans last night with a Ham bone. Now if you are a vegan or vegetarian you I know still can have wonderful flavorful beans! Oh how good they can be! A great addititon to any diet. You can have them for breakfast, lunch or dinner! What a great and easy food to have on hand! If they mess with your stomach you can soak twice, use Beano or add an herb my Latino friends tell me about and the name is escaping me as I write this! AH! I will write you guys back later!

    YEEEEEEEEEEEEES!!!!!!!!!! All my Latino comrades at work say this herb helps combat the gas so they add it to the beans as garnish etc.
    One told me it is easy to grow!

    I think we we're on the same wave link, took out the Easter Ham bone an cook a pot of mixed beans for Sunday dinner, yum..
    I will re-run the left overs tonight, thanks for reminding me.. now i don't have to go home and cook tonight, just warm it up ...:smile:

    My primary recommended substituting beans for meat every once in a while, so does my trainer (sometimes I think she recommends it because she knows I'll make a whole bunch of whatever it is I'm making and she knows I'll bring some to her because she likes my cooking and she's the only vegetarian friend I have-so I know I can give it to her so it won't go to waste.) Beans are high in fiber as well as protein, which helps keep you full. So I'll do that at least once a week (okay twice since the second time is when I go to Chipotle's for a veggie burrito bowl) or if I want a quick meal: black beans, yellow rice, and some salsa and I'm on my way!

    Last year was the first time I saw Epazote grown. I was very surprised at how tall it was and that it didn't smell like something you would eat. Some of the better herbs are like that though - they smell more like medicine than something to season food with.

    Growning up, I hated beans. Its a texture thing. I don't like fuzzy, mushy textures. I wouldn't eat beans and I swalled peas whole. I don't eat stewed vegetables (still) or traditional roasted veggies. Give me something raw, un-cooked and I will eat it if it's chewable. Beans aren't, in their ready to cook state, chewable. I did, eventually, learn to eat them as an adult and my favorite is black but my hispanic husband hates black beans. So, I don't cook beans for him and he doesn't cook beans for me. Funny how things work out.

    For lunch I made a burrito with black beans, chicken, cheese and tomatoes. My next personal challenge is to stop buying them canned and just get the dry beans... I have no patience while they're soaking/cooking!
