What's your favorite healthy meal/snack?

I just love food:) I'm always thinking of new recipes, and many times the best recipes come from people you know who have made a dish at a get together. SO, I was wondering what your favorite healthy dish might be?

Ok, I'm just trying to steal your ideas, lol:laugh:

Mine is a simple one, but sooo delicious!! Baha Fish Tacos!! Now, I'm late for work, so I'll post how to make them later:)

    I'm pretty lucky like that, too. He does all the grilling and anything to do with cooking fish (he has the most amazing Salmon meals)!!

    My new favorite snack is mini baby carrotts and Baba Gannouj (Fountain of youth brand). Oh and PB2 and whole wheat bread (Private Selection sugar free 100% whole wheat). Yumm!!!

    If I don't have a lot of time for breakfast in the mornings (which is most of the time) I'll have a peanut butter banana smoothie. I use 1 cup of fat free vanilla yogurt, 1/2 cup of skim milk, 1 banana, 4 Tblsp of peanut butter, 1 Tblsp of honey and a handful of ice, and blend it in the blender. This makes enough for 2 people. YUM!

    Savory Pancakes

    Whisk together 1/2 cup cream of wheat with 1/2 cup yogurt. and 1/2 cup water. Leave aside for 20 mins.
    Chop into little pieces about 3 tbsp of onion, about 4-5 cherry tomatos (you can use regular tomatoes but remember to drain them) and a little cilantro. Add the chopped veggies to the yogurt mixture. Add salt to taste, a 1/2 tsp cumin seeds for flavor and paprika or cayenne for heat.
    Thin out the batter with water if needed. The batter should not be flowing consistency but should be easy to scoop up.
    Heat a pan. Drizzle oil if needed. Add a scoop of batter(1/3 cup) and spread it a little. This pancake is usually made quite thick. Cover with a lid and steam until brown. Turn over and cook without cover until brown.

    Makes about 3. Enjoy! They are very filling.

    3 egg omelett with 2 slices of low-fat jarlsberg cheese. 310 calories and fills me up for hours and hours.

    - Pineapple and cottage cheese
    - Hummus with Flax Snax instead of crackers/chips (Flax Snax “Spicy” variety, which actually aren’t spicy, just really yummy, can be found at Whole Foods).
    - Lettuce wraps...really endless variety! (I like left over chicken, sliced thin with mozzarella cheese, tomatoes and a drizzle of balsamic vinaigrette; cucumbers optional)
    - Quick guacamole (half of an avocado, two tbsp. salsa, lime juice, garlic powder, S&P) with celery or another healthy “shoveling” mechanism

    MMM..I want a snack now! :)
