Eating the whole animal

What's up with people who eat ham or pork chops, but won't eat scrapple? I understand people don't like certain organ meats (I just find heart too tough), but If you are going to eat meat, it's simply wasteful to say you won't eat a sausage made of ground up parts of the animal that don't make appetizing steaks. Nose to tail, people. Now where the heck are my sweetbreads?
