    When I am really hungry after long day of work, I just like to fry some freezed vegetables in butter, or make a soup from it. Simple, healthy and fast!

    I like to grill/roast a bunch of vegetables (zucchini, mushrooms, onions, garlic, peppers, fennel, carrots, potatoes - whatever I have on hand) over the weekend & use them for all sorts of stuff during the week - omelets, wraps, salads, baked potato toppings, etc.
    Last night I made pizzas with flat breads, spread with pesto, topped with sliced fresh tomatoes, roasted veggies and sprinkled with provolone/mozzarella & parmesan/romano, topped with fresh herbs like basil, rosemary, oregano. Delicious!!

    I love a good salad, not a wimpy lettuce and nothing else salad but some with beans, avocado, pasta, mozzarella, tomatoes, cucumber, etc.

    I'm like you, I stopped eating meat not for diet reasons but because I didn't want to eat animals so I do eat fake meats (Quorn, Fry's, Tivall, Redwood) - I've been veggie for over a decade and they have certainly improved. Anyway, here are some photos of my meals! Some look huge but they are all around 600 calories or less.

    Just wondering what are your meat substitutes they all look like they have meat in them. I am new to this way of eating also and love the ideas.

    I have recently become vegetarian. I love meat, but I am doing this for my peace of mind, my morals, and for the protection of animals. Nothing to do with my diet. It is totally by choice.

    Basically I have no real experience with cooking vegetarian meals. Every meal I've ever cooked before, from scratch, has had meat in it, for my family... So I was just wondering what some of your favourite meals and recipes for dinners were?

    If you have experience of cooking it shouldn't be a problem. In the same way you substitute an ingredient when you don't have it or don't like it in meat food you just do the same. Still eat spag bol but use quorn mince or lentils. Still eat stir-fry but use tofu or throw an egg into the rice. Mushroom instead of beef in stroganoff. I have found a food I wanted and couldn't cook soemhow.
