I always make myself chicken, pesto and pasta with cheese the night before. And I eat the leftovers for breakfast, lol.
I have to avoid coffee the night before, it gives me terrible stomach cramps on the run!

My preferences are similar to those already posted: slightly lower fiber and fat than usual, and I avoid dairy and anything extra spicy. I can pretty much eat anything, though! That being said, I often end up eating spaghetti with a homemade veggie tomato sauce simply because I love pasta and rarely feel justified shoveling it into my mouth except before a big race. Makes my tummy and my brain happy!

Also, re: sushi. YES! I like to make homemade rolls and eat them for lunch prior to a race.

I've never had a bad race when I ate chinese takeout the night before...

I can eat anything the night before. I have a cast iron stomach.

Pretty much the same for me. My favorite is fettuccini alfredo.

I'm so jealous of you guys! If I had fettuccine Alfredo the night before a race, I'd eat the port-a-pottie after 0.1 miles

I'm pretty boring. Pasta with a little bit of chicken and a mild red sauce. Anything else, and "bad things happen."
