Mmmm zucchini, tomatoes, chicken and a sprinkle of feta cheese and balsamic vinegar. Yum!

    olive oil
    minced garlic
    zucchini
    chicken (i used precooked strips)
    cherry tomatoes cut in half
    feta cheese
    good balsamic vinegar

heat a little olive oil in frying pan. add garlic i like about 1 heaped tablespoon of minced garlic.
once garlic is starting to brown add zucchini and chicken
fry zucchini until its only *just* soft
toss in a bowl with raw tomatoes
sprinkle with feta and a drizzle of balsamic vinegar.

    fast, easy, delish!

I made this up and it turned out awesome. I called hem fajitas but they aren't really except there is chicken in them lol. Super easy and makes tonnes!!

One can of diced tomatoes -drained liquid off
One can black beans - any beans or bean blend would work
    One can of corn nibblets
Fajita or taco seasoning packet - i find you need to over season with the crock pot
    One large grated carrot
    One diced onion
One or two tablespoons of minced garlic
    Three frozen chicken breasts

Mix it all together in a crock pot. Throw in chicken still frozen. Cook on low all day. Remove chicken, shred it, return to crock pot until ready to eat

I served it in flour tortillas with shredded cheese. You could serve with sour cream and other toppings too. We had a simple salad on the side. We all ate two so that's 8 in total and there is enough left over for at least a dozen more

    all ingredients except the chicken

i like the look of the first one you have put on lori, but not the second one so much. i think its because im a fussy food eater and it the colours arent right i wont eat it. I suppose i could add some more colourful ingredients. But i definitely will try the first one. is a zuccini the same as a courgette? it looks like a courgette

I made this paleo orange chicken for the first time today, (http://www.health-bent.com/poultry/paleo-orange-chicken) and mixed it with couscous and some salad. I really enjoyed it. I should have taken a picture but forgot to.

This also is a great meal for dinner if you dont want to take too long.
    1. Core and top a pepper and put it in the oven for 25-30 mins on 180degrees.
    2. Put rice on when 10 mins left. Whisk an egg, season if you wish and scramble.
    3. Mix egg with 2 oz of cooked rice and peas. (depending on size of pepper you can do 2 stuffed or 1 with extra rice left over)
    4. Chop pepper open, stuff with rice mix and grate cheese over.
    5. Close it back up and put back in the oven for 2 mins to melt the cheese.
    6. MOST IMPORTANT...... STUFF FACE!
