Favorite vegan cooking blogs?

Hi everyone! This is my first post :)

I've been a lacto-ovo vegetarian for 11 years. Four weeks ago, at my first prenatal appointment (I was 11 weeks pregnant), I found out that I had what was called a partial molar pregnancy. I had never heard of it before, but it's a reproductive fluke that not only results in miscarriage, but creates a tumor that can become cancerous. I had surgery that week, and now am being monitored weekly to make sure my blood levels are returning to normal. My husband and I had talked about cutting out dairy and eggs completely for a long time, and with my now increased risk of cancer, and the need to get my body back in shape, finally decided to take the plunge! I took to the web for vegan cooking inspiration, and have been finding some amazing recipes (seriously, cashew "ricotta" is one of my favorite things ever!).

I was wondering what some of your favorite resources are for healthy vegan recipes? We made the switch 3 weeks ago, and I've lost 8 lbs with the diet change, calorie tracking, and exercise. What I love so far about the switch is that I'm feeling more full with less calories. I'm focusing on whole-food based recipes, and trying to shun the fake substitutes as much as possible.

    Budget Bytes is omni but has a lot of vegan/easily veganized recipes, all of which are simple, and especially great if budget is a concern! budgetbytes.com

    and every once in a while, when I want something that replicates the buttery version perfectly and health/low-cal is not a concern, I always use veganbaking.net

    I am sorry about your difficult time but pleased that finding this lifestyle has helped you over the past three weeks.
    I would like to offer caution against high-fat "gourmet" meals as in some of ohsheglows's recipes. They are undenyably delicious, but if you are battling illness, I personally think that low fat is the way to go, so that the body's energy can go to resting and healing rather than digesting difficult foods.
    I like "30bananas a day" because its low fat, vegan and raw all in one.
    But I hear "dr mcdougall" is good too and incorporates cooked foods, although I havent checked his stuff out yet.

    I'm a devotee of The PPK, too, but I also like the Fat-Free Vegan Kitchen: http://blog.fatfreevegan.com/ Although I don't personally avoid fat at all, so I tend to add oil/vegan butter to the recipes. There are also tons of user-submitted recipes on VegWeb: http://vegweb.com/ Also Happy Herbivore is great for no-nonsense stuff made with non-exotic ingredients: http://happyherbivore.com/ I love her "egg" salad. I make at least a batch a week.

    Pinterest saves my life practically every time I cook! My recipe board is by far my biggest and most used. Thanks everyone, looks like I'll definitely have to look at PPK :)
