Nutritous Red Velvet Pancakes

This recipe combines whole grains (oats), vegetables (beets), antioxidants (cacao), and protein(egg whites and cacao) into your breakfast; while also tasting delicious!!!

Oats=energy source; Whole grains are packed with nutrients including protein, fiber, B vitamins, antioxidants, and trace minerals (iron, zinc, copper, and magnesium).
Beets=high source of Folate, and they contain magnesium, calcium, iron and phosperous! They are also considered a fiber food and contain vitamins A and C as well as niacin!
Cacao=high in Magnesium for heart and bone health, fiber for digestive health, calcium for strong bones, and iron for the blood; they also score a 900 on the ORAC antioxidant scale, compared to blueberries which score a 65!
Egg whites=high protien and low calories at 5 grams of protein and 25 calories per egg white!

Nutritious Red Velvet Pancakes:

-1 cup oats(ground up in food processor or blender)
-3 TBSP Cacao (or cocoa powder)
-1 tsp cinnamon
-1/2 tsp baking powder
-5 Sweet Heat Infused Beets from Earthfare
-5 TBSP almond milk or reg. milk
-6 TBSP egg whites
-1/8 tsp almond extract
-5-8 drops French vanilla stevia or agave to taste

-Combine all ingredients in food processor or blender
-Cook on MEDIUM heat

"Cream Cheese Topping"

-1/2 cup plain Greek yogurt
-1/4 cup cottage cheese
-4 drops French Vanilla stevia or agave to taste

    Are beets a seasonal vegetable? I don't recall seeing them in the produce dept at my Walmart

    You can find canned beets in the vegetable aisle and they work perfectly in this recipe!
