Polenta

Hi everyone,
Does anyone have any recipes that utilises polenta(ground corn/maize).

    Hiya Ben
    I just use the quick cooking version, I add water & nutritional yeast, when its cooked i pour it into an oven tray....when it has set & cooled...i cut it into batons (like large potato chips), spray with olive oil then bake in medium oven
    ..you'll never eat regular chips again, so good!

    Thought you might like a *very important* polenta update!
    This morning I had it for breakfast, made on almond milk with a little mashed banana and some raisins through it.... this was MAGIC! I served it with fruit and some cinnamon on top.

    I suspect this to be a versatile food, I shall experiment further

    I have made polenta two ways that are really delicious. The first is broccoli polenta. Make polenta as usual. Process 1 or 2 stalks of broccoli in the food processor. Add the raw broccoli to the polenta mixture. Stir to combine and pour into an baking dish to set. The broccoli gives a nice crunchy texture to the polenta.

    The second recipe is leek, spaghetti squash polenta. I baked the squash the night before. Slice the leeks thinly and carmelize in a pot. Remove the leeks from the pan and set aside. I use the same pot and prepare the polenta as usual. Once it starts to get a bit thick, add the leeks and the spaghetti squash. Stir to combine and pour into an baking dish to set. If you like a little spice, add some (1/2 tsp) crushed chili peppers when making the polenta.

    I like to broil my set polenta for a few minutes prior to serving.
