I'm probably a bad person to answer this, since I prefer homemade for almost everything, but maybe you'll still find this helpful. ;)

All-Purpose Flour: 350g almond flour, 350g brown rice flour, 150g tapioca flour, 150g white rice flour, or King Arthur's GF AP flour
Pancake Mix: http://glutenfreegirl.com/2011/03/gluten-free-pancakes-for-the-ratio-rally/ (these are so so so much better than any mix I've had)
    Noodles/Pasta: Tinkyada
    Pizza Crust: http://www.artisanbreadinfive.com/2010/01/05/gluten-free-crusty-boule
    Cookies: Glutino
Pie Crust: http://glutenfreegirl.com/2009/11/gluten-free-pie-crust/ or Whole Foods has a frozen one

Cookie's: Enjoy Life (making them yourself is always better though)

Talk to me about rudi's tortillas. I've not tried them. I've tried a couple of GF tortillas and always tossed them and gone back to corn tortillas. Rudi's are good? My preferred GF bread is the Udi's Millet Chia bread.

Rudi's tortillas are so good. Like "real" flour tortillas. I make quesadillas with them in my cast iron skillet and they are phenomenal. I know this question was asked a month and half ago but I just saw it! Sorry!

Udi's makes an ok tortilla but they are bit thicker than Rudi's and not quite as good.

    All-Purpose Flour: My homemade mix
2 Cups Sorghum flour (made in my VitaMix)
    1 Cup Potato starch
2 Cups Millet flour (made in my VitaMix)
2 Cups oat flour (made in my Vitamix)
    1/4 Cup rice bran
Pancake Mix: Add 1/4 tsp Xantham gum to above mix
    Pasta: Ancient Harvest Quinoa
Pizza crust made from above mix replacing xantham gum with 1/4 tsp yeast
Pie crust made from my mix )
    Cookies I don't eat.

Today I've tried Julian's Bakery Paleo bread for the first time.
Since I'm not celiac I also (occasionally) make bread with einkorn flour, ground in the VitaMix

    Rudi's tortilla's are okay.

Pizza Crust Review: Udi's Pizza Crust

Ok, so I was taken aback by the price for 2 crusts, 5.99, but figured I would try it out before ordering online. We mad a white pizza & a traditional pizza and both were ok. Would I purchase again? No, especially not at 5.99

Flour mix: I make my own with brown rice, tapioca flour, and potato starch. I add in some flaxseed meal to nearly everything too. I've had trouble with some bean flours and such, so I stick to basic. Plus, for me, this is just the most cost effective.
Pancake mix: make my own pancakes with the above mix.
Pasta: I prefer Tinkyada, but Sam Mills corn pasta (Walmart) is super cheap, and doesn't taste too bad. Even my picky husband will eat it.
Pizza crust: Again, make my own. I use Gluten Free on a Shoestring cookbook for everything.
Cookies and pie crust: again, I make everything from scratch. It's healthier, I control what goes in it.

Not on your list, but thought I would share anyway. My husband misses breaded fish (fillets and shrimp) we found and he tried a new brand and LOVED it!

Brand is Starfish, web site is star-fish.com and surprisingly we found it in the regular fish section - not in with all of the special GF foods. He was beyond impressed - he said the haddock was really good, and the shrimp was not bad either. He has disliked any others he has tried......
