150 satisfying calories. Spray skillet with coconut oil (or your preference), sauté an onion, 2 carrots, 2 stalks of celery til tender, add 1 cup lentils and stir to coat. Add 2.5-3 cups of low sodium veg stock (or water). Add S&P, cumin, smoked paprika, curry - about 1T each. Juice 1-2 lemons into the pot, then lay the lemon into the beans. Bring to boil, cover, reduce to simmer @ 12 mins or until water is mostly evaporated and lentils are tender. Serve plain or with chicken, fish, pork, a fried egg, whatever floats your boat. Good stuff!
