Bacon

So my wife and I just returned from a vacation in North Carolina on the Outer Banks (CF OBX is pretty cool, btw) and on our way back while driving through Virginia on the eastern shore of the Chesapeake Bay she wanted to buy some fireworks for her dad.

We stopped a place in a small, rural town right off the highway where they advertised Fireworks, Ham, Bacon.

She went for the fire works, I went to examine the other two.

The ham and bacon is all salt and pepper dry cured and room stable. They suggest hanging the hams and bacon in a cool dry room, much like you would a proscuitto.

I bought two 3lb slabs of bacon and cooked some up last night. It still has the skin on, so with a sharp knife you peel back some skin and then slice off the bacon. In the top 2-3 bacons I've ever tried in my life.

Might be the best money I've spent in a year.

    One of the best things about that region of virginia are the biscuits with ham. That is all they are, biscuits and ham. Made with lard. soo bad for you but OMG delicious. I want to do an endurance/adventure race down there just to have the excuse to eat them.

    To be fair the only meat I can handle is chicken breast and beef or lamb mince. I get grossed out too easily.

    sounds excellent! You may have to call them and have them ship you more when it's time for a refill.

    Had some this morning. It is super salty so you really only need one strip at a time.

    I honestly think it will work better as something to cook with than something to eat by itself. Diced up and rendered down you could sautee just about any vegetable in it and come out with a winner.

    Virginia ham is cured the same way, so probably fairly similar in taste.

    It just struck me that I have a package of bean soup that would probably be extra good with a few pieces of this bacon added in for good measure. Not exactly Paleo but very tasty!
