Weekly Challenge 9/2/14-9/8/14 Breakfast

Alright, It's weekly challenge time again!!! And this weeks challenge is breakfast.... Those of you who know me, know that this is not the first time I have posted this challenge, lol! So this week eat breakfast, a healthy breakfast preferably! Some healthy breakfast ideas might be greek yogurt, fruit smoothies, veggie frittata, ect... If you have any favorite healthy breakfast ideas, share them with the group! Also feel free to share what you had for breakfast today or any day this week. You might inspire someone elses breakfast :drinker: Go team!!!

    Something I've just discovered was using my husband's protein powder in my breakfast cereal. I wanted to add protein without the fat or many calories. I only use 14 grams...about 1/3 a serving, so the calories are less than 60, and it has a lot of nutrients. Sprinkle it into my oatmeal and it adds flavor, plus I don't need sweeteners so I'm saving the calories from using honey. AND I think I felt full longer.

    So far, the vanilla in oatmeal is good. The chocolate was good, but the appearance was not..chocolate oats taste much better than they look! I'm going to buy some strawberry; I think I'll really like that flavor. Then, I may even try adding it to other foods on days I don't eat oatmeal....might even be good in yogurt or in a smoothie.

    I'm thinking I shouldn't of had a very berry cheesecake and banana bread for breakfast. lol! :noway:

    Today is the kids first day of school, except my little guy has the first two days off so he came to work with me so we got takeout for breakfast, a bagel and a Greek yogurt! It's half good for me!!!

    Here's what I like to do for breakfast:

    --Preheat oven to 375--
    16 oz egg beaters
    4 large eggs
    1/4 cup milk
    -- whisk together in a bowl--
    --add additional stuff like:
    * Diced ham
    * Reduced fat cheddar cheese
    * Spinach
    * Sauteed onion
    * Turkey breakfast sausage
    * Salsa
    * Mushrooms
    * Etc
    (The only thing I've found that does NOT taste good... is broccoli. Not sure why. But it was yucky.)

    --Spray a muffin tin with nonstick spray or very lightly coat with butter (I use a paper towel and just wipe it down til its slippery)--
    --Pour mixture into muffin tin--
    --Bake for roughly 25 minutes. May need up to 35--

    You can pretty much just pull the "muffins" out after they cool. They usually come out ~100 calories each so I bag 2 together, throw a couple bags in the freezer and a couple in the fridge and they feed me all week!

    ETA: Microwave them for about 45 sec before you eat them. (LOL)

    Wow! That sounds awesome, I'm gonna have to try that! Today I had a peach pineapple and raspberry smoothie blended with vanilla almond milk. Tasty :happy:

    I have got to try the breakfast muffins I am always trying to make breakfast go quicker!


    Today I had sleep for breakfast I just slept all morning I feel like I have had no rest for months so I skipped food and had some!

    I actually feel awesome now and am heading out for a walk!

    Breakfast:
    1 cup of Kashi Blueberry Clusters
    1/2 cup Blue Diamond honey almond milk
    For the second thing I had a soft taco shell that I put whipped pb & chocolate mixture on a small tortilla and added 1 serving of blueberry preserves. I rolled it up like a burrito. Tomorrow I am going to try something new.

    My breakfast today was a protein shake. I am thinking of fixing up some egg whites into a patty style, take it off, put some pb on it and roll it up.
