99 days left friends! A big part of my success is directly tied to meal planning. Its getting quite chilly here in New England, the leaves are starting to change and pumpkins are everywhere. So please share...

What are your favorite healthy crockpot recipes?

    So many but my faves are:

    Apple Sauce-
    8 - 10 large apples ( i like to mix the types some sweet, some tart, red, yellow) peeled,cored and chopped
    1/2 cup of apple cider
    1 tablespoon of cinnamon ( or to taste)
    1 tablespoon of lemon
    1 teaspoon of vanilla

    Low 4-6 then I blen with a hand blended to but I like to keep it chunky

    Saves my life .. that and the rice cooker/steamer

    I cook a 4 pound whole chicken, and that gives me chicken for salad, soups, etc., for the week.

    I stuff the chicken with veggies that may have been in the fridge a little too long... onion, garlic, mushrooms, carrots, celery, herbs... whatever you have. If I have some old lemons or limes, I'll put those in, too. Season however you like, and if you have left over veggies that won't fit in the cavity, throw those on top. Pour in some water or broth, cook on low for 8 hours, and BOOM! You have tender, juicy chicken. Be sure to put the chicken on either balls of foil, or lemons/limes cut in half (flat side down) so the chicken isn't sitting in the broth, because I cook it skin on to keep it more moist.

    Strain the broth and use for soup, rice, quinoa, cous cous, poaching liquid...

    Another option is to stuff the cavity with dried fruit. Delicious!

    Slow Cooker Beef with Red Wine and Shallots

    A lovely rich slow cooker beef recipe. Perfect comfort food for cold winter evenings.

    Ingredients

    1 kilogram Braising steak (Or any stewing beef)
    200 grams Streaky bacon (unsmoked)
    1 Onion
    1 Clove of garlic
    2 tablespoon Plain flour
    300ml Red wine
    1 Bay leaf
    12 Shallots
    1 Carrot
    Salt and pepper

    Combine 2-3 lbs browned pork pieces (country ribs), 1 lb of kielbasa cut in chunks (turkey if you want to be healthier about it), one smoked turkey leg, a bag of drained but unrinsed sauerkraut (bagged, not canned), a bag of shredded coleslaw mix, this liquid mixture (whisk together 1/2 cup of apple juice, 1/2 cup of water plus 1 dissolved bouillon cube, 1 tbsp caraway seeds, 1 tbsp pepper, 1 tsp paprika, and 1 tbsp spicy ground mustard) in your crockpot and cook on low for 8 hours. Remove the turkey leg and the pork, shred, and return to the cooked cabbage mixture. Then adjust seasonings.

    Serve atop mashed potatoes for non-dieters, or alone for you. Yum. Delicious, full of fiber and protein, and super low in carbohydrate (if you don't eat the mashed potatoes). A fall favorite.

    Please check out ONCE A MONTH COOKING. You can find awesome crockpot recipes. I have mastered the art of crockpot prep.....I can make 20 separate meals in less than 2 hours. You put them in ziplock bags, freeze then pop them in the fridge or crockpot to cook and viola dinner is made
