This is probably one of the hardest things for me...getting creative in the kitchen. I don't really get too bored with my food choices, but that doesn't mean I shouldn't experiment, right?
I just found out last night that while my boyfriend does love spinach, he is getting sick of having it at almost every dinner. I LOVE spinach so much. I cook it (frozen) in a pan (no oil or butter, just a 1/4-1/2 cup of water) with a little sea salt, pepper, garlic powder, and plenty of mrs. dash low sodium southwestern spice...it is so good. Sometimes, if I'm really hungry in the morning I'll make this spinach and put a poached (well, it's supposed to be a poached egg) or a sunny-side up egg on top. So good.
My boyfriend roasted radishes the other night for dinner...kind of tastes like a bland onion, but he seemed to like it. If he has to eat my spinach, I guess I'll choke down a few radishes. I think the radishes would've been better if the rosemary and thyme had actually stuck to them.0 -
My favorite thing in the world to make for an easy, healthy, super delicious side or entree is oven roasted veggies. I use broccoli, brussel sprouts, asparagus, or beets. Chop em up, toss with a little (eg 1-2 T) olive oil and lots of minced garlic and S&P, bake on a pan att 375 for ~20 minutes, broil for a couple minutes until all toasty, and devour!
Seriously, something about the roasting and the garlic just makes it the most amazingly good dish ever. And healthy and low calorie!0 -
Yum!!! I LOVE roasted veggies! Grilled veggies, too, but we're kinda passed that season.
I guess portion control is my main issue..especially when it comes to carbs and desserts! I try to eat more protein to fill me up but I still slip up with that.
One yummy dessert I have been making lately is Nana Ice Cream. It seems like bananas go bad so fast so I end up freezing them. Well, now I mix one with 2 tbsp of PB2, 1/3 cup of any kind of milk and top it with any kind of topping (dark chocolate chips, peanut butter cups, cool whip, etc.). It's usually ready after about an hour (I stir it halfway). It's pretty much guilt free!
I try to post my food on Instagram with the hashtag #CafeCaitlin. I tend to forget to use the hashtag so you can always scroll through my page. I did a 7 Day Clean Eating Challenge in September and posted my meals 3 times a day for the 7 days. You guys can always use that to branch off of :-)0 -
My favorite snack lately has been homemade quacamole! I get 2 ripe avacados and one of those guacamole seasoning packs, and voila! Good with celery or baked tortilla chips. My new guilty pleasure!0

So this morning I tried out a really cool recipe! You slice apples and dunk them in pancake batter! I made protein pancakes with them but they turned out pretty amazing! :-)

I'm starting to lower my carbs, not necessarily going low carb, but I can eat a lot of carbs. Going over my daily goal is easy for me. Because oatmeal was out, I made a big pan of tofu scramble. 2 packages of frozen spinach, 2 onions, 2 packages of organic silken tofu, and 2 packages of mushrooms. Cook all the veggies and season to taste. I like salt, pepper, sodium free Mrs. Dash southwest, and garlic powder. Drain the tofu and cook. Put in a large baking dish for 20 minutes at 350 and I've got a filling, veggie-packed, low carb breakfast to last me the whole week. I like to freeze half. Takes time, but it is so tasty in the morning and so much more interesting than oatmeal.0

The tofu really does taste no different than egg whites, but I like tofu anyway.0
