Egg Whites

For just about all recipes that call for eggs, I substitute applesauce or Energy (probably not the correct word or spelling) Egg Replacer. When a recipe calls for egg WHITES, what do you use and how has your recipe turned out with the substitution?

Have you tried flax or chia 'eggs'? (En-er-G also works for egg whites, doesn't it? I thought it did, anyway...) Egg whites are usually the glue/binder, so I would think flax or chia seeds would work. Of course, it all depends on the recipe, I suppose. For some of them, even mashed ripened bananas work well.
