Does anyone else here like cooking from scratch? Anyone fancy swapping healthy recipes to help excite our taste buds while we shed the pounds? I thought it might be nice to share our favourites. Please feel free to add some below! :)

    Homemade chicken and lentil soup

    1tsp oil
    1 small onion, chopped (around 95g)
    1 medium carrot, grated (around 70g)
    200g red lentils (dry weight)
    225g roast chicken (I used thigh meat, no skin)
    1 stock cube/stock pot
    1.5 ltrs water

    1. Sautee the onion till translucent.
    2. Add the water, stock cube, carrot, lentils and chicken.
    3. Bring to the boil and simmer for around 30 mins, till the lentils are cooked.
    4. Season to taste and serve.

    Even my fussy 6 year old son likes this soup! It's a lovely, warming soup with a little kick from the spice that is delicious!

    Tomato, Chickpea and chorizo soup

    1 tsp oil
    2 garlic cloves, minced
    1 small onion, chopped (around 95g)
    1 ham stock cube
    500mls passata (you can use a couple of tins of chopped tomatoes if preferred)
    100g chorizo (diced)
    1 tin chickpeas
    1 tsp dried mixed herbs
    1 heaped tsp smoked paprika
    1 ltr water

    1. Sautee the garlic and onions in the oil.
    2. Add all other ingredients, bring to the boil, and simmer for around 20 minutes.
    3. Serve and enjoy.
