I like frittatas paired with a salad as a meatless option--all the deliciousness of quiche without the nutritional disaster of the crust. I use this recipe/tool for proportions: http://www.finecooking.com/articles/cyor/frittata.aspx0

We eat a lot of meatless meals in general, so on Lent I just make sure to do Fridays (and usually Wednesdays). One of our favorites is coconut curried red lentils (even dh and my 13yo, who don't like lentils, love it).
1 cup red lentils (rinsed well)
1 can coconut milk
1-2 cups vegetable broth
1 tbsp curry powder
1 tsp salt
1 inch cube ginger, minced
1-2 cloves garlic, minced
1 onion, minced
1 tomato, diced
1tbsp coconut oil
Heat the oil and sautee the garlic, ginger, and onion. Add in the diced tomato and seasonings and heat for a few more minutes. Add the remaining ingredients and simmer until the lentils are tender. Serve over rice if you wish.0 -

They're even better then next day!
Here's another veggie meal we love. Don't skimp on the oregano, it's a lot but it's perfect! I also do this to use up fresh veggies at the end of the week.

I'm really struggling with meatless days because my current diet is low carb. Basically I'm down to veggies. All I've had today is guacamole and celery. HANGRY!!!0

My favorite Lenten meals would be...
Fried Salmon with a huge serving of buttered Broccoli or Fish (usually bass) battered in almond flour & fried in coconut oil.

Taco soup: 1 qt broth (use veggie for Fridays), 1 can each black beans, kidney beans, white beans, refried beans, enchilada sauce (mild or hot, green or red), 1 pkt taco seasoning. On days other than Fridays, you can add 1 pound of the ground or shredded meat of your choosing, use a different broth, etc. Also, you can change the beans around as you like, or add canned corn, hominy, etc.0
