Low(er) Carb Vegetarian recipes, please.

Trying to keep my daily carbs between 100- 120, which isn't crazy low, but still requires some planning.

Any amazing, healthy, low-carb, vegetarian recipes anyone would like to share?

    Try slicing zucchini into little circles (like 1/4 inch or so) and spoon a tiny bit of pizza sauce and mozzarella cheese. It's low carb and high protein (with some fats). It's delicious and super yummy and filling!

    I like to make soups......taco, spaghetti, and cheeseburger soup (no meat at all, of course) are really good and can be lower carb. Just add a small amount of pasta or no pasta at all and since its a soup, everything is sorta "thinned" out. The calories are thinned out, too.
