Good recipe needed!

Hi all! Was wondering if any of y'all have a really good, on plan recipe for stuffed green bell peppers. One of my professors is bringing me a bunch of peppers from his garden and have never had stuffed peppers. Thought this would be a great time to try them if I could find a good recipe.

I like to put my mushroom risotto inside of a hollowed out bell pepper and bake it with a small amount of cheese on top0

Please take note that I am not a fan of peppers so I did not try these
There is also a recipe in this downloadable PDF file that has lots of NutriSystem Friendly Low Glycemic Index Recipes in it. This one uses Couscous.

I usually just rip strings off from my reduce low fat string cheese that I've bought for one of my snacks so I don't have extra cheese sitting around.0

I used to use string cheese too. I have since gone to using Dannon Light & Fit Greek Yogurt as being higher protein and tastier and using Baked Skinless Chicken and Turkey or Lean Beef or Pork as PFs. Ham is usable but very high in Sodium usually and causes water retention.
