To get ourselves started, here is a healthy but DELICIOUS dinner recipe that I tested out just last week! Yogurt Fettuccine Alfredo! Looking to save on carbs? Use spaghetti squash instead, like I did! I also added some thinly sliced chicken breast that I had previously cooked for the week. It was just the indulgence I was looking for without the guilt and it actually tastes just as amazing, if not better, the next day!

    Yum!!!

Something that worked really well for me last night was something my dad calls egg noodle casserole. If I reach a certain hunger point (which of course happens all the time when I diet) then I feel sick and basically can't even stand the sight of most foods. Before the diet I would eat a little ice cream to settle my stomach, but nowadays that won't fly.

So what I did last night is cook a handful of egg noodles, toss them in a tiny bit of butter, and sprinkle Parmesan cheese on them. It takes about five minutes and a small bowl was less than 200 calories. And so delicious! I usually mix in some broccoli or mixed veggies to round it out.

Would love to see everyone else's recipes. I am always looking for ideas!

Hi all! I absolutely LOVE cooking and it's a stress reliever for me. I'm constantly trying out new recipes and am happy to share as I do so. I made the recipe below for dinner last night and it was unbelievable:

I didn't have a cajun seasoning on hand so I mixed equal parts garlic salt, onion powder, smoked paprika, and ancho chile powder together and seasoned the chicken with that. I also added mushrooms, and meant to add a poblano from the garden but forgot. My whole family devoured this.

That looks fantastic! That's going in my menu this week! Thanks for sharing!

I made these zucchini sticks to go with my grilled chicken tonight. They were really good. I did cook them an extra 5 minutes though than what is listed on the recipe. https://www.eatthismuch.com/recipe/view/easy-dinner-parmesan-zucchini,39242/

I don't like to take a lot of time cooking, so the recipes have to be easy.

My new recipe of the week: inside out cabbage rolls though I cook the meat (I used turkey sausage) in a frying pan and then put everything into a pot to boil.

Did you use Greek or just regular? Sounds delicious - thanks for sharing.

For my yogurt alfredo? I used Greek. I use Greek for everything! Plain greek yogurt is also my substitute for sour cream too!

Dinner last night was a huge hit! I made WW Chimichangas! They were delicious! My boyfriend loved them as well! However, I'm not sure where they're nutrition facts came from but they say they're around 100 calories for one. According to MFP when I put all the ingredients in, they're more like 200. The brand of tortilla is a huge factor I'm assuming. If you prepare these, just be mindful of that. My store didn't have any low fat or fat free tortillas so I used whole wheat. I put plain greek yogurt on top in place of sour cream and some spicy salsa! Yum! I also made a very large batch of these to have as leftovers today and to vacuum seal and freeze some for future days when I'm short on time! Preparation is key in healthy eating habits! Set yourself up for success!
