I tried PB Fudge and Cheesecake!

I'm about 7.5 months into this WOE and havent dabbled much in desserts (dessert is usually just a TBSP of natural peanut butter, or an avocado). I have had the low-carb jello puddings, but not much else.
Well, I decided I felt confident enough in this lifestyle to try some keto friendly desserts, and last night I made keto cheesecake and keto peanut butter fudge.
I wanted to chill them for a full 24 hours, but fell a few hours short - temptation was killing me haha.

I liked these, but I feel like I would have liked them better if they had all been rolled into balls or something so that the texture of the crust was mixed throughout.
but the cheesecake...THESE ARE AMAZING!!!!

Mine weren't coming out of the oven with as dark of a crust, I gave up around 10 minutes - delicious and the bases were darker just not the tops. They're bigger than I expected too - the full depth of the muffin tin (I had been anticipating closer to half). I did use paper liners, super easy - they dont need to be greased or anything.
I tracked in 2 for today, I ate 1 plain and later I'm going to try drizzling some sugar free caramel on the other.
Pretty sure my no-longer-keto hubby is going to love these too!

Those cheesecakes look amazing! I love it when food tastes good AND looks pretty. I'm saving the recipe for the next birthday/holiday/family party that happens. I can't handle even keto sweets hanging around the house.0

Aren't they cute? I didnt add the strawberries on mine, still avoiding fruit 99% of the time. I also used bottled lemon juice instead of freshly squeezed which I bet would make it even more amazing!0
