Mexican Stuffed Bell Peppers

1 lb. ground beef (I use 80/20)
1 medium onion, chopped
3 oz. cheddar cheese, shredded
6 oz. tomato sauce
1/2 tsp. garlic powder
1 tsp. cumin
1 tsp. dried oregano
1 tsp. chili powder
3 bell peppers
  • Preheat oven to 350F. Cut the peppers in half and remove seeds and membrane.
  • Brown the ground beef and chopped onion in a large skillet over medium heat. (Optional: drain the fat).
  • Reduce heat to low. Stir in the tomato sauce and 2/3 of the shredded cheese. (If you drained the fat, you may want to add a little more tomato sauce to keep them moist)
  • Stir in the garlic powder, cumin, oregano and chili powder.
  • Divide the meat mixture among the pepper halves and place in a baking dish.
  • Sprinkle the remaining cheese over the tops.
  • Bake at 350F for 35-40 minutes, until cheese starts to brown.

Makes 6 servings. Per pepper half: 285 calories, 17g protein, 20g fat, 8g carbs, 56mg sodium (using no-salt-added tomato sauce)

    Yum! Did you have any trouble with the peppers not being cooked enough? I often find with stuffed pepper recipes I need to parboil them a bit first?

    I have parboiled the peppers on occasion, but don't think it's necessary. YMMV :)

    When you say "pin this" are you talking about Pinterest? I've never used that site - lol! In any case, no I don't mind at all!

    @MyriiStorm I think @JessicaLCHF posted in the other forum that she uses PInterest to meal plan and make grocery lists. I checked out her setup. She is WAY more organized than I could dream of being. It's definitely inspiring...if she posts the link again, definitely worth a glance. You don't have to sign up to look. It's basically a public way to share links she's saved.

    I told you I hoard pins! :) I LOVE Pinterest. It makes organizing menus so easy. I make lists each season and shop from them. Here's my profile, you can see my menus towards the bottom by season. I need to get busy on a fall menu. I'll be adding stuffed peppers to it!
