Something easy would be a hardy salad. With beans, corn, tomatoes, cucumber, carrort, and or fruit. Maybe brown rice with curry chick peas or tofu.1

Also a chipotle style burrito bowl! http://www.fitnowstephanie.com/veggie-burrito-bowl/1

I agree I still need my food to be savory in order for me to not slip up. So far, I've done a veggie stir fry with brown rice that turned out really good. Ate that for lunch fr about 3 days along with a sweet potato.
Also I found this pasta made from 3 ingredients (2 being brown rice and quinoa the 3rd water I think) at Trader Joe's that pared with a simple ingredient marinara sauce that turned out good. Sauté some veggies in there and add vegan cheese , it was delicious.
Lastly, to get some protein in I made "Texas caviar" mine only had black beans, fresh salsa , and frozen sweet corn. I also through in some taco seasoning that I found at Trader Joe's just to enhance the flavor. I ate this like nachos with whole weekly flaxseed tortilla chips.
Honestly, the way I'm getting though it, is just making meals that I would normally eat with out the meat, bread, sugar, etc....

Aldi has a lot of brown rice pasta and organic pasta sauce with out sugar. I've also been eating their rice packets-- 7 grains and quinoa and brown rice. They've been amazing and one whole packet is about 550 calories. Also, I made vegetarian chili Sunday. This was so good and very filling!1
