Best healthy dish to prepare in pressure cooker

I find myself wanting to make things in the pressure cooker that aren't that healthy and therefore where I can only have a small portion. Like everyone else in my family has it as a large part of their meal, and I have a small portion with some salad or something on the side.

What are some things you make that are really healthy?

    I poach chicken breasts in the IP and use it for everything all week. I also do my hard boiled eggs in my IP 5 minutes pressure, 5 minutes NR, 5 minutes in cold bath, perfect every time. Last night I took frozen pork chops bone in, added onion, mushrooms 1/2 cup milk 1/4 cup water and a can of cream of mushroom soup and pressure cooked 15 minutes. I ate a pork chop and had some vegies, it was great. I love how tender meat comes out in these pots. Won't be trading it in for anything else in my near future.

    I made quinoa in my Instant Pot today to add to my salads this week. Fast and easy. 8 minutes on manual, quick release at the beep.

    I do 1lb of pork loin for 10 minutes. You can shred it or slice it after and add any kind of sauce in smaller amounts. Sometimes I add vegetables that take 10 minutes as well; medium new potatoes, large chunks of carrots, squash chunks, sweet potato. Rub the pork with spices, or just salt and pepper. I usually add about a cup of water as well.

    Can't beat steel cut oats... I triple the recipe and add sliced apples and cinnamon. I start it in the morning, jump on the elliptical while it cooks, make coffee, and it's done! Lasts at least a couple of days and is great to add fresh fruit on top. I have also poached chicken breasts like above poster. They were a great texture, but bland! Do you season the water or the breast if you poach?

    When I poach chicken I add some onion, celery, carrot and black peppercorns.
