Help with hunger and calories

I have been vegan for about 3 weeks. I usually eat 1200-1600 calories per day, though my goal is 1800. Usually I'm not hungry though. Today I'm ravenous. Nothing is making me full. Could the calorie deficit I've been doing be causing this crazy hunger? Am I doing this wrong? I do light exercise due to my obesity.

Update- lentils helped. I still want to know if I'm making mistakes

    Sometimes I get like that too. I think it's normal. Our bodies biologically are used to a "feast" and "famine" state. When I'm like that, I just eat at maintenance... I try to keep it as healthy as possible... then the next day I'm back to a deficit.

    Some days I am more hungry than others, and I think that having high calorie and lower calories days is ok-- this is called calorie "cycling" when you do it intentionally. As you track your eating and exercise you might notice trends, and you can use those to advantage, eventually.
