Favorite plant-based go-to recipes? (Especially easy ones!)

Hi everyone! So excited to be here. I've been WFPB since May 2019, so just over 2 months. It's delicious and I feel so, so much better than I have in a long time. I'm also pairing it with exercise and I have to say, I feel about a decade younger than my actual mid-thirties chronological age.
What are some of your go-to recipes? I'm loving my breakfast smoothie (based on Dr. Greger's smoothie recipe in How Not to Die--2 cups greens, 1 cup berries, 1 banana, 1 cup plant milk, 2 tbsp ground flax). I also really, really love this oatmeal muffin recipe and this carrot cake oatmeal!
I'd love to hear some of your faves!

Burrito bowls: rice, beans, salsa, corn and turnip "cheese" sauce heated up. A tablespoon of vinegar (rice is my fave) after it's heated. Eat alone, over greens, or with oil free crackers/tortilla chips. 🤤 Favorite fast meal this past month 😊0
