    Well, I chickened out and went with med rare at 135 degrees internal. It was delicious, of course. Served with a creamy horseradish sauce. I will say that the seam fat rendered out pretty well in spite of not going with the higher internal temp. Maybe because I set smoker temp at 205 and it took 3 hours for the small roast.
    Back to work Monday.
    Mike, think you will get any hard water to drill holes in this year?
    I predict the NE will get hit hard in late Feb and March with snow.

    Good morning gentlemen.

    I guess it's a holiday. All it means to us is that we can't go to the bank and there isn't any mail.

    It should be dry enough, today, to get Sassy out for a walk. Other than that, I will be in the shop, continuing the processing of those cherry logs.

    Looking like icefishing here will be like ice fishing in Georgia this year. Hoping for a deep freeze and a few good blizzards, though; it's still only midway through winter.

    Doing some cleanup around my place this morning, and then out for a hike. It's 24º and cloudy. Has been cloudy for a week; starting to miss the sun.

    Lee, that balsamic reduction you served your venison with sounded rather amazing.

    Most of the rain is behind us now and we have a nice long 10 day stretch ahead with little rain, though the flooding issues will be with us as the run off continues. Out family gathering at brunch went well and helped eased the wounds from Christmas. We started to pack up Christmas and hopefully will finish today. I can't say I was much help. The journey to the restaurant was hard on my knee and the lack of sleep was catching up with me. But I did rack up over 9 hours last night. We will head off to buy a fridge and range today to get the sale savings but ask to delay delivery a bit. I see the surgeon today about my knee replacement and get the info on what to expect and prepare for as we reorganize our year and relocation plans. We are still coming to terms with all that. We didn't see this one coming.

    Bill, I usually do a red currant cumberland sauce with venison, but didn't have any currant jam or red wine. I had dry sherry, balsamic glaze, and peach/jalapeno jam. It worked well. Balsamic makes everything taste better.
    Sure hope your ortho surgeon get your knee working ASAP.

    I like rather a medium rare of 130-ish to 135°F No idea what weather we might get long term but I am thinking probably on the mild side?? Likely below freezing this coming week-end for a low.

    I was a bit surprised our class was held today online but pleased to get my yoga in. It is thru the auspices of the local community college so hard to say. The teacher does the class from home anyway.

    Lee: sometimes I think I'd eat darn near anything with creamy horseradish on it. I love that stuff.
