Any quick favorite family friendly meals?

  • When I'm short on time (which seems like a lot with a 4 month old)...I have 2 recipes that I usually fall back on...

    Mexican Casserole
    1 lb ground Hamburger Meat (cooked and drained)
    1 Taco seasoning packet
    1 small onion (diced small pieces)
    1 can diced tomatoes
    1 can corn
    1 can pinto beans (the one with jalepenos works well)
    1 can cream of mushroom
    Monterray jack cheese (shredded) (use as much as you like)
    Sharp cheddar cheese (shredded) (use as much as you like)
    Tostitos
    Garlic powder (as much as you like)
    Salt (as much as you like)
    Pepper (as much as you like)

    Brown hamburger meat and onions together, drain...return to pan add taco seasoning and however much water the packet asks for and add diced tomatoes, and simmer. In another bowl, add corn, pinto beans, cream of mushroom and seasonings. Grease a 9x13 baking dish with butter, put a layer of tostitos on the bottom...put a layer of the corn/bean mixture over chips, then put a layer of the meat mixture over that, then a layer of the cheeses, then a layer of chips, then corn/bean mixture, then meat mixture, then top with cheese. Cover in foil and bake at 400 for about 20 min. I serve with salad.

    Beans and Meat
    1 large can of Baked Beans
    1 lb of ground hamburger meat (cooked and drained)
    1 small onion (diced small pieces)
    Ketchup
    Mustard
    Worchestershire Sauce (1 tbs)
    Garlic Powder
    Salt
    pepper

    Brown meat and onions, drain and return to pan...add beans, ketchup and mustard to taste (it will have a sweet, tangy almost bbq flavor), and worchestershire sauce...add garlic powder, salt and pepper (as much as you like)....just mix and let simmer for about 15 min. Serve with salad or cornbread.

    I don't know how much of the seasonings to use, because I just add however much according to my tastes. I never follow recipes to a "T" anyways :)

    Hi. I am new here, but thought I would post my go to meal.

    Lemon Chicken (Super easy)

    Heat up a little olive oil in the fry pan.
    Sprinkle some Lemon Pepper seasoning on some chicken breasts and cook in the pan until just about done.
    Once almost done, squeeze some lemon juice over the chicken and finish cooking.

    While that is being cooked, I will cook up some rice and roast up whatever veggies I have in the crisper.

    Just put some olive oil, salt and pepper on the veggies and throw in the oven at 375 until your desired doneness,

    Super easy and I can throw the kids in the shower at the same time.

    grilled sausage with potatoes and green beans

    Those are a few...I am stuck in a rut of the same ole food...so can't wait to share a few of my favs with some of your favs.
