New to group and GF

Hi all,
I hope it is ok if I join the group!
I have been dealing with some health issues for about a year now and have been having tests to find out what is going on. At my last appointment the Dr. suggested I try a gluten free diet as he thinks I may be gluten intolerant. My sister also suggested the same thing as she is a nurse and found out a couple years ago that she is celiac.
So I have been doing a lot of reading and trying recipes I find (so far no luck finding an edible bread recipe :ohwell: ) I am finding it hard to figure out what i can and can't eat other than lean proteins and fruits and veggies. I really miss the bread, but at the same time am finding I am already starting to feel a bit better.
I won't be able to offer much advice at this point, but I would appreciate any you have to offer, and hopefully in time I will be able to do the same.
I hope it is ok if I join the group!

Heyy!! I'm kind of in the same boat! I was diagnosed about a month and a half ago as gluten intolerant...and oh my word, it's no joke!
Bad news...cause I like to get it out of the way! I can't offer much help on the bread front. All the bread I've tried has been completely DIGUSTING!! But if you're feeling adventurous, you could try the Udi brand bread...that's probably the least bad! lol I find it in the organic section!
But the good news is that I've found A LOT of things that I could eat...you just have to make sure you read the labels! For starters, potatos are now your best friend; at least the homemade kind. You have to be careful about eating them about because of how they're processed or cooked or something like that...just ask or look online first to be safe! Sweet potatos are good too! And beans! And beans have fiber! Rice...just not the boxed kind. So you could make regular white rice or brown rice or whatever kind of rice you wanted and then add flavor and stuff from there! By boxed kind, I really mean Rice-A-Roni and things like that! Again just check the ingredients for wheat, barley, and/or rye...stuff like that seem to sneak gluten in the mix to thicken everything up! Now that it's colder weather (at least where I am!) I love soup and salad...but again you have to be careful with the soup because some of the canned/boxed soup uses wheat to thicken everything! (like I almost died when I found out I couldn't have campbell's brocolli and cheese soup anymore! lol but then I found this organic brocolli soup that taste pretty good too!)
So...what's best helped me is...always always always look at the labels of things before you buy!
And going out is a little more difficult, but most places have gluten free menus online and stuff so just let the waitor know!
well, I'm pretty sure I've rambled enough! but I'm still learning too so if you learn any new tid bits (like good bread)...fill me in!0 -
Hi,
It is really challenging to change your diet but so worth it! It is a great idea to stick to unprocessed gf foods and slowly add in gf processed items like bread, crackers etc. Have you tried quinoa? It is super versatile and very healthy.
I use Udi's bread or Food For Life wraps. the Udi's bread is awesome! I almost cried the first time I made a grilled cheese! Expensive so I use sparingly. I have been gf for a year and am just starting to work on baking. I also love Natural Nectar crackle breads with hummus or laughing cow cheese. Very low cal and yummy.
Good luck.0 -
Check out my blog, I've posted a recipe for GF bread that you can eat untoasted (and have another that I need to post):

Elizabeth Barbone has an AMAZING cook book called Easy Gluten Free Baking that has great bread recipes as well as cookies, cakes, cupcakes, and a "Tastes Like..." section. I love her. Like woah.0 -
Udi's is good but I completely agree - 99% of what's out there is crap. My advice? Invest in a breadmaker or a mixer and bread pans and learn to bake I was diagnosed before a lot of the current (crappy) stuff was even on the market, so I had no choice but to learn to bake. Any cookbook by Bette Hagman, the "Gluten-Free Gourmet" will have bread recipes in them. I've tried probably about a dozen or so of her bread recipes and they are all excellent and WAY better than the store stuff. They are so good I serve them to guests and my guests prefer my bread over regular bread PLUS, the cost per loaf is significantly lower0

Hello! I'm in exactly the same boat, sans the trying anything yet ... I got a call yesterday from my doc suggesting that I give gluten-free a try. So here I am. It's all a little overwhelming at first!0

Thank you all so much!! I really appreciate the advice.
My mother almost always gives me a gift certifcate for books for Christmas so this year I think I will invest in one of those cookbooks.
It really is overwhelming trying to figure this all out, with some help and guidence though I am sure I will manage.0 -
Hi There! I'm new to myfitnesspal, as well as the GF lifestyle. My doctor suspects a Gluten Sensitivity, and has suggested I go on the GF diet. I was tested last week for Celiac Disease, which came back negative. I was a bread addict, and am finding it most difficult giving that up, but otherwise I'm not feeling too badly about the drastic diet change.
I live in a small community, so finding GF products is a little harder. I was thinking that by having to go gluten free, it would help kick start my weight loss journey, but I don't find that is the case at all. My husband is from mexico, so we eat a lot of corn tortillas, tostada's etc, and I find my calorie intake has not really went down a whole lot. I guess as I learn more about healthy substitutes, I can start making better choices, but right now I am just grasping for things I CAN eat. lol0 -
The Gluten Free Bible is also an excellent reference/cookbook for those just beginning their gluten free journey. It gives a lot of back ground info that really makes sense. And any Paleo cookbook will also be gluten free.
I've been gluten free for about 8 years now, and while I substituted a lot in the beginning (gf pasta, gf bread, gf cookies, etc), I don't do it nearly so much anymore, because I have just adapted to a new way of eating that doesn't include all those things I used to think I couldn't live without.
I will say, however, that when I do want a special treat, I get a loaf of Udi's bread (you can order it and many other gf items online!). In fact, this year's Thanksgiving stuffing was made with Udi's, and of the 20 people I had for dinner, not one of them suspected the dressing was gluten free, and many said it was "Just like Grandma used to make!"0 -

I love the GFB! Some awesome recipes.
As for finding bread, it's super hard in my opinion. In general, I don't like it. There are times I break down and get some from Whole Foods or a local baker. I do like the kinnikinnick brand hot dog buns and hamburger buns. But for the most part, I try to avoid the stuff because it makes my cravings for wheat return.

On a side note, I'm new to the group as well. I just recently found out about this group thing on MFP. Been fighting with being gf for about a year and a half now, I think. Maybe 2 years? So, hi to all the other gf people who weren't on the Gluten Free Gals & Guys thread!0
