Hey everyone
Hoping that we can share all of our fave healthy recipes! Any sort of recipe let see them all! Breakfast, lunch, supper and snacks and maybe some yummy deserts too?
Hoping we could make this a sticky so that people can always find it.
Would love to make a COTH cook book at some point down the road too.

Lunch: White Bean, Kale and Zucchini Soup
My stand-by.. can get monotonous ..but at least it keeps me full and on track with the low cal and fiber
Pretty basic-- onion, garlic.. add the above with some oregano , salt and pepper
Breakfast: Baked apples
1-2 chopped apples with cinnamon, some raisins, maybe a few almonds... bake or microwave for 3 min.
This is my pre-workout meal... must have something else after or Ill crash0 -
My favorite vegetarian vegetable soup:
- takes about an hour to prepare, but most of that is simmering time, and it makes a decent sized pot of soup that is tasty leftover and freezes well.
In a large soup pot combine:
2 potatos, skin left on, scrubbed and diced
1 large onion, chopped
1/2 head of cabbage, chopped
4 stalks celery, chopped
4 large carrots, diced
6 cups water
2 bay leaves
6 cloves of garlic
2 tsp salt (adjustable)
Bring to a boil, simmer covered for 20 minutes
Add to soup:
1 14oz can plain diced tomatoes, including liquid
2 cups tomato juice
Simmer covered for another 20 minutes
Add to soup:
2 small zucchini, skin on, diced
1 bunch green onions, chopped
Simmer covered 10 more minutes. Adjust salt and/or add pepper to taste, and enjoy!0
