Hi everyone! I just joined your group in hopes of learning of new recipes and gaining some GF support! I have been working on going GF for about a month now. At first I was eating a little bit to see if I noticed any changes, and I absolutely did! After eating gluten I would feel bloated and just not good. This weekend I had apple crisp (has oats in it) and I felt like I was going to die. So as of yesterday I have cut it out completely! I am done feeling that way. I only find it to be difficult to stay GF sometimes on the weekends when my boyfriend wants to eat out and we get somewhere and I can't find anything gluten free :( But that is OVER! I will stick to this! :D

A great resource for GF recipes is Pinterest! Check it out!

    Hi!!

I know what you're talking about! I tested negative for celiac disease, but since cutting it out I feel soo much better. I also cut out a lot of processed foods in general and it's amazing how great I feel. I've found that I can "cheat" though. Like, if I don't eat gluten for all day and have three beers at night I feel okay. Or if my meal is GF but I have one piece of fresh bread (a weakness) I am okay. But if I were to eat a pasta dish with bread and beer my stomach will kill me and I have to rush to the bathroom.

It's hard to explain to people sometimes since GF has become somewhat of a "fad." I feel like I get a lot of eye rolling sometimes when I ask for GF stuff and divulge that I had a gluten intolerance, not celiac disease. From my research I've read that many people have this intolerance and many are undiagnosed. I've seen countless doctors over the years and have only been diagnosed with IBS. My IBS symptoms have gotten so much better since really reducing my gluten.

My boyfriend is as supportive as he can be, but it's hard figuring out what I can eat and not eat without getting sick.

Good luck and maybe we can share ideas!

    Erin
