New/Transitioning to GF

Hey All-- A few months ago, my husband and I gave up wheat as part of a cleanse, and we really loved how it made us feel. We were living with his parents for a few months, so we didn't stick with it after the cleanse. We've been on our own again for awhile, and feel like it's ready to go back to a wheat free diet. Neither one of us has a diagnosis that requires it, but we just feel better when doing it. I know it's a "fad" thing these days, but I say if a fad honestly makes you feel better.... it's not like a cabbage soup diet! We are making the transition to GF, meaning we are going to finish up what's in the house already, but not replace it.

I have to say--- the hardest thing for us is LUNCHES. What to do about lunches? It's hard getting out of a sandwich mindset.

I'm also dairy free--- casein allergy and lactose intolerance. I know that the gluten free will become as second nature as being dairy free, but getting to that point is going to be a challenge! (And likewise, sometimes just as difficult to work around in social situations.) I appreciate any suggestions from you veterans. :happy:

    You can still do sandwiches with g-f bread (i.e. Canyon Bakehouse makes a great sandwich multi-grain bread).

    Yea, I have accepted that I will forever be that girl, at the restaurant/party/social situation, that asks a lot of questions and has special requirements or just brings her own treats to share. Some people are very accomodating and others don't understand, so they just sort of ignore it.

    It is worth it to feel good after a meal.

    Salads, curry, chili, veggies and quinoa, potatoes, leftovers of any kind, veggies and hummus, fruit, lots of different things. I don't do meat, dairy, or any grains, but if you do, you could throw in pasta, meats, tuna, rice, etc. as well.

    Sandwiches are so boring anyway! Take a look at some international dishes, experiment with Bento, try out some green smoothies or raw food cuisine, expand your horizons!

    Use rice wraps or make your own wraps with buckwheat flour (a thin pancake) to make your own GF sandwiches. I've even made a wrap from an egg and water which was excellent.

    Make rice dishes you can eat cold (don't forget to take your fork). Also salads in a box.

    If you have a microwave available then the world is your oyster, any leftovers will do :happy:
